Fresh Summer Peaches
We recently made a visit to South Carolina peach country to see family. And when I say peach country, I mean you stand outside and see peach trees in every direction! We stopped at a produce stand on our way out of town and loaded up on beautiful, ripe peaches.
The thing with ripe peaches is that you have to use them up FAST. So anytime I can think up a way to use a whole bunch at one time, I’m eager to try it.
We eat instant pot oatmeal for breakfast at least once a week, and peaches sounded to me like a delicious addition.
This oatmeal recipe uses 4 diced fresh peaches, so you get peaches in every bite!

Oatmeal in the Instant Pot
I use my instant pot several times a week, mainly for the same handful of purposes over and over again.
Oatmeal is one of my favorite things to make in it. The flavor and texture aren’t all that different than making it on the stovetop. And by the time you prep, let the Instant Pot come to pressure, cook the oatmeal, and clean up, it isn’t necessarily quicker.
However, first thing in the morning, I do love the dump-and-go aspect of making oatmeal in the instant pot. I can get it going and walk away, something I can’t do when I’m making it on the stove.
So the instant pot frees me up to get dressed and ready for the day, drink my coffee and read, get laundry started, or help the kids get ready. You get the idea! It buys a busy mama a precious half hour in the morning.

My Most Frequent Uses for the Instant Pot
Along with oatmeal, my go-to foods in the instant pot are whole chicken, chicken bone broth, rice, and plain yogurt. It may not sound like much, but with the frequency that I make these foods, I really do get my money’s worth out of this appliance!
Whole Chicken – It is so easy to add some water, oil and spices, and it’s ready in about an hour! My family really enjoys the flavor and texture of the meat, and it makes for good leftover chicken to freeze or repurpose in other meals for the week. As an added bonus, it sets me up to make easy bone broth.
Chicken Bone Broth – It is healthy and delicious and the perfect base for soups, beans and rice. When I make a whole chicken, I leave the juices and bones in the instant pot, add a little apple cider vinegar and water, and in a few hours I have nutritious, flavorful broth for the week!
Rice – We just love the way rice turns out in the instant pot, and it has been fun to experiment with different veggies, fresh herbs and other add-ins lately.
Homemade Plain Yogurt – It’s easy to keep us stocked with creamy whole milk plain yogurt now that I have learned to make it in the instant pot. And it saves us a couple dollars each grocery run, too!

Tips for Making Oatmeal In the Instant Pot
1. For easier cleanup, allow 5 to 10 minutes of natural release, rather than quick release as soon as the oatmeal is done. Times I have used the quick release, the oatmeal has bubbled up to the top and through the vent. It’s not a huge deal if you are in a hurry to get food on the table, but it is a little messier to clean.
2. Use a designated sealing ring for “sweet” foods. Otherwise, your oatmeal may have a faint chicken flavor to it. Not my fave! My instant pot came with 2 rings. I use the clear one for meats and savory foods, and I use the red one for sweet things, like oatmeal.
3. Make sure you use enough liquid, especially when cooking on high pressure! The last thing you want is the dreaded “Food Burn” warning at 7 AM. My rule of thumb for oatmeal is 2.5 cups of water per 1 cup of old fashioned oats. If I add anything extra that soaks up liquid, like chia seeds, I make sure there is a little more liquid. In this recipe, I find the added 1/4 cup of water provides enough extra liquid for the chia seeds.
Ingredients for Instant Pot Peaches and Cream Oatmeal:
4 fresh peaches, diced (about 4 cups)
2 cups old fashioned oats
1 Tbsp chia seeds
5 1/4 cups water
1 cinnamon stick
1/4 tsp sea salt
2 tsp vanilla extract
1/4 cup raw honey, plus more to drizzle on top if desired
1/4 cup half & half or heavy cream

Instructions for Making Peaches and Cream Oatmeal in the Instant Pot:
1. Dice fresh peaches.
2. Add all ingredients, except half & half or cream, to Instant Pot, and stir to combine.
3. Make sure to place silicone sealing ring on inside of Instant Pot lid (this oatmeal recipe will be cooked at high pressure), and close lid.
4. Using the Manual function, set Instant Pot to cook on high pressure for 4 minutes.
5. Once oatmeal is done, allow 5-10 minutes natural release before releasing the pressure.
6. Stir in half & half or heavy cream.
7. Serve with fresh diced peaches, a drizzle of honey, and a little extra cream if desired.

I really think I’m going to have to buy an instant pot! This recipe looks so good and like an easy way to get breakfast on the table.
I got my instant pot as a bday gift last fall! I admit I was a little skeptical at first, especially because it was taking up precious countertop space. But once I got over the initial learning curve, I have really loved it! I don’t have a wide variety of things I cook in it, but I have some staples I cook in it every week.

Haha, I love that! To me it is worth giving up the precious counter top space for those basic staples I make over and over again. Oh no, food burn has definitely happened to me before, and it’s almost always been a matter of not adding enough liquid. You could also make it on low pressure and just give yourself more cook time.
